- Let it cook on a very low flame for a few more minutes, stirring at intervals.
- Add the remaining 2 tablespoons of ghee and mix thoroughly
- Continue cooking for another 5 minutes until the halwa leaves the sides of the pan and starts to fold up. This indicates the perfect consistency of halwa.
Add Flavourings:

Roast the Cashew Nuts:
- In a separate pan, roast the cashew nuts in 2 tablespoons of ghee until they are golden brown.
- Pour the roasted cashews and ghee onto the halwa and mix well.
Serve the Halwa:
- Switch off the flame and immediately transfer the halwa into a banana leaf or a banana leaf-lined bowl for that perfect aroma and aesthetic touch.
- Alternatively, you can transfer it into a greased bowl.
- Serve warm or at room temperature.
Notes & Tips:
- Sweet Potato Varieties: For the best results, use Beauregard or Jewel sweet potatoes, which are often peach-coloured and have a naturally sweet flavour that complements this dessert perfectly. These varieties cook to a creamy, smooth texture, making them ideal for halwa.
- Colour Considerations: While white-fleshed sweet potatoes like the Hannah variety can also be used and will give a lighter colour to the halwa, be aware that purple sweet potatoes (such as Okinawan or Stokes Purple) will result in a darker hue, which might not be as visually appealing for this traditional dish.
- Texture Tips: Ensure the sweet potatoes are steamed until very soft, then blend them into a smooth purée. This will help achieve the perfect consistency for your halwa.
- Sweetness: Adjust the sweetness according to your preference by varying the amount of jaggery or sugar.
- Cooking: Ensure to stir continuously while cooking to prevent the halwa from sticking to the pan.
- Serving Suggestions: Using banana leaves not only enhances the aroma but also adds an authentic touch to the presentation.
