A Christmas Tradition Passed Through Generations

The aroma of caramelised sugar and spices wafting through the house signals the arrival of Christmas. For my family, this isn’t just baking—it’s a legacy steeped in culture and tradition.  Making Christmas Fruit Cake, also known as Rich Fruit Cake or Kerala Plum Cake, is more than just a recipe in our household — it’s a heartfelt tradition. Married into a Christian family with roots in the culturally rich Cochin - Fort Cochin, influenced by Portuguese heritage, I embraced this legacy with open arms. Being a devoted daughter-in-law, I strive to perfect family recipes, ensuring they are preserved for the next generation. Many of these traditional recipes, featured on Essence of Life - Food, are my way of ensuring our family’s culinary traditions live on.

Christmas Essentials in Our Household

    In our home, Christmas wouldn’t feel complete without Rich Fruit Cakes and Homemade Wines. These are the cornerstone of our festive celebrations, not just for Christmas but also for Easter and other family gatherings. Among the flurry of festive dishes, these staples hold a special place.

Preparing for Christmas: A Year-Long Affair

    Over the years, I’ve adopted a meticulous year-long routine to prepare for Christmas. Here’s a glimpse into my preparation process:

  • Soaking the Dry Fruits: This is a crucial step for achieving the rich flavour of the cake. I soak an assortment of dry fruits in my homemade Raisin Wine/Grape Wine (sometimes Rum) at least three months before Christmas. These fruits are refrigerated and ready whenever needed. For example, I baked a Rich Fruit Cake for my son’s birthday in July using fruits soaked for nearly a year!
  • Caramel Syrup and Nuts: I prepare caramel syrup and chop nuts a day or two before baking to ensure freshness and consistency.

Reliving Childhood Memories

    For me, Christmas Fruit Cake evokes fond memories of my childhood. My dad would always bring home a beautifully iced Fruit Cake from JM & Sons, a beloved bakery in Coimbatore. The royal icing, with its firm yet sweet texture, was always the highlight. While icing wasn’t a tradition in my in-laws’ home, my husband and I adore it.

    To honour our shared love for iced cakes, I began icing our Christmas cakes for special occasions, like our wedding anniversary in January. I save a portion of the cake, specifically for this purpose, and add a layer of Royal Icing to make it extra special.

The Spotlight: Royal Icing

    After much trial and error with eggy-tasting icings, I’ve perfected a Royal Icing recipe that’s both simple and delectable. Inspired by the standards of Indian bakeries, this icing is:

  • Initially flowy for easy pouring and smooth application.
  • Slightly hard when set, yet melts in your mouth.
  • Full of flavour, perfectly complementing the rich cake beneath.

What is Royal Icing?

Royal Icing requires just 3 ingredients:

  • Confectioners’ Sugar
  • Meringue Powder or Egg Whites
  • Water

But my recipe adds a twist! Here’s what makes it special:

  • Egg Whites: Don’t worry about raw eggs; we’ll heat-treat them for safety. Use pasteurised eggs if needed.
  • Lemon Juice: Prevents sugar crystallisation and helps the icing set firmly.
  • Customised Sweetener: No need to hunt for confectioners’ sugar; simply use sieved powdered sugar.

How to Heat Treat Egg Whites?

     While this step is NOT necessary to making royal icing, it’s a good method to know when working with raw egg whites. To heat treat the eggs, cook them in a bain-marie* over low heat for 2-3 minutes, whisking constantly. Alternatively, you can simply cook this on a very-very low flame.

    Do this just until the egg whites have become warm, but are not hot. This will kill any potential bacteria in the eggs, making them safe to use when raw, and with the addition of the lemon juice, you’ll be as safe as can be! If you don’t want to use egg whites then go ahead with meringue powder.

    *A bain marie (ban mah-REE) is the fancy term for a hot water bath.  It is cooking delicate dishes over a hot water bath or an intricate way compared to double boiling.

Confectioners' Sugar/Normal Sugar

    And again I am doing this Icing with the normal White Sugar, powdered and sieved (no need to go search for confectioners' sugar).  And one other ingredient I have added into the Icing is the Lemon Juice, which helps avoid crystallization of Sugar and also helps to harden the Icing once set.

    The trickiest part is making the Royal Icing to land up on the Cakes in the perfect consistency.  Sometimes I need more water, sometimes I need less water. But the wonderful thing is that you can manipulate the icing to get the proper consistency by adding more water or more confectioners’ sugar/powdered white sugar. It’s awesome.  So you see no strict rules, still it is a foolproof recipe. I know why I am loving this Royal Icing Recipe.

How Long Does it Take for Royal Icing to Dry?

  • The icing forms a skin within 1 hour and hardens completely in 4-6 hours.
  • This firm yet melt-in-the-mouth texture is reminiscent of bakery-style cakes from Kerala and Coimbatore.

    Classic Royal Icings are made with Meringue powder. But this is a Royal Icing, but a slightly hard version, which is quite famous in Bakeries.  So sticking on to the style served as in our local Bakeries in Coimbatore & Kerala.

Ingredients for Royal Icing

  • Powdered Sugar - 4 cups (ensure it's sifted for a smooth finish)
  • Lemon Juice - 2 teaspoons (for a subtle tang and stabilisation)
  • Egg Whites - From 2 eggs (for a glossy, firm texture)
  • Water - 30 ml (6 teaspoons, adjust for consistency)

 

Method: Preparing Royal Icing

Step 1: Powder and Sift the Sugar

  • Grind sugar into a fine powder using a coffee grinder or small mixer jar.
  • Sieve the powdered sugar to eliminate lumps or coarse particles.

Step 2: Mix the Ingredients

  • Combine egg whites and lemon juice in a mixing bowl.
  • Gradually add powdered sugar, one cup at a time, mixing thoroughly after each addition.
  • Once all the sugar is added, the mixture will thicken significantly.

Step 3: Adjust the Consistency

  • Add water, 1 teaspoon at a time, to achieve the desired flowy texture.
  • Mix well to ensure a smooth, lump-free consistency.
 

How to Heat Treat Royal Icing

Why Heat Treat?

Heat treating ensures the safety of raw egg whites without compromising the icing's texture or quality.

Step 1: Set Up a Water Bath

  • Place a bowl of the sugar-egg mixture over a pot of simmering water (double-boiler setup).
  • Keep the flame at its lowest setting.(The idea is to just heat treat the Royal Icing Mixture and not cooking).

Step 2: Heat Treat Gently

  • Stir continuously to avoid cooking the egg whites.
  • Gradually, the mixture will loosen; add 1 teaspoon of water if needed.

Step 3: Final Adjustment

  • Repeat adding water (up to 6 teaspoons total) until the mixture is slightly flowy but not watery.
  • Remove from heat once the icing reaches the right consistency and is warm to the touch.

Pro Tip: Do not overheat or boil the mixture, as this can ruin the texture of your royal icing.

  • Sift Twice: Always sift the powdered sugar twice for a velvety finish.
  • Consistency Matters: For piping, keep the icing thick; for flooding, thin it out slightly.

Prepare Your Cake for Icing

  • Place your Christmas Fruit Cake on a cake stand for easy handling.
  • Line the edges of the cake stand with parchment paper to catch any drips and keep your setup neat.

Pour the Royal Icing

  • Gently pour the prepared Royal Icing over the centre of the cake.
  • Allow the icing to flow naturally, ensuring the entire cake is covered evenly.

     

    Pro Tip: No need to spread or smooth the icing with a spatula. Its flowy texture ensures a uniform layer.

Let the Icing Set

  • Leave the cake undisturbed for about 1 hour to allow the icing to begin setting.
  • Let the icing harden completely by leaving it aside for 4-6 hours.

Clean Up and Decorate

  • Once the icing is set, gently remove the parchment paper from the base of the cake.
  • Use leftover icing to create small decorative sugar balls or other shapes.
    • Optionally, colour the sugar balls with food colouring for a festive touch.
  • Arrange the decorations around the borders of the cake for a polished look.

  • Sugar Type: You can use confectioners’ sugar for convenience or powder regular white sugar finely. Ensure it’s well-sifted to eliminate lumps.
